Remove to a bowl of ice water - when they're cool enough to handle, crack them gently on the counter, so there's a network of cracks all over. Then simmer them in something tasty for 1.5 hours - my recipe called for tea bags, soy sauce, scallions, giner, and maybe a few other things. You can use the simmering liquid as a dipping sauce when you serve the eggs.
